Ingredients
- Zucchini
- Eggs
- Parmesan Cheese Block
- Plain flour
- Curly Parsley
- Garlic powder
- Sea Salt
- Black Pepper, Ground
- Olive Oil
- High protein yoghurt
Instructions
- 1.Grate the zucchini using the coarse side of a grater.
- 2.Place the grated zucchini in a clean tea towel or paper towel and squeeze out as much liquid as possible.
- 3.Transfer the zucchini to a mixing bowl.
- 4.Add the egg, Parmesan cheese, flour, parsley, garlic powder, salt, and black pepper.
- 5.Mix thoroughly until all ingredients are evenly combined.
- 6.Heat the olive oil in a non-stick frying pan over medium heat.
- 7.Spoon half of the mixture into the pan and gently flatten it into a fritter using the back of the spoon.
- 8.Repeat with the remaining mixture.
- 9.Cook for about 4–5 minutes on each side until golden brown and cooked through.
- 10.Transfer the fritters to a plate lined with paper towel to remove excess oil.
- 11.Serve warm with a spoonful of Greek yogurt if desired.
