Ingredients

  • Zucchini
  • Eggs
  • Parmesan Cheese Block
  • Plain flour
  • Curly Parsley
  • Garlic powder
  • Sea Salt
  • Black Pepper, Ground
  • Olive Oil
  • High protein yoghurt

Instructions

  1. 1.Grate the zucchini using the coarse side of a grater.
  2. 2.Place the grated zucchini in a clean tea towel or paper towel and squeeze out as much liquid as possible.
  3. 3.Transfer the zucchini to a mixing bowl.
  4. 4.Add the egg, Parmesan cheese, flour, parsley, garlic powder, salt, and black pepper.
  5. 5.Mix thoroughly until all ingredients are evenly combined.
  6. 6.Heat the olive oil in a non-stick frying pan over medium heat.
  7. 7.Spoon half of the mixture into the pan and gently flatten it into a fritter using the back of the spoon.
  8. 8.Repeat with the remaining mixture.
  9. 9.Cook for about 4–5 minutes on each side until golden brown and cooked through.
  10. 10.Transfer the fritters to a plate lined with paper towel to remove excess oil.
  11. 11.Serve warm with a spoonful of Greek yogurt if desired.
