Ingredients
- Zucchini
- Extra Lean Beef Mince
- Crushed tomatoes
- Red Onion
- Garlic cloves
- Ricotta Light
- LIGHT MOZZARELLA SHREDDED CHEESE
- Olive Oil
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 200°C.
- 2.Heat the olive oil and cook the onion, garlic and beef mince until browned. Add the tomatoes and oregano, then simmer for 10 minutes.
- 3.Cut the zucchini into slices, like strips.
- 4.Layer zucchini slices, meat sauce and ricotta in a small baking dish.
- 5.Finish with mozzarella on top.
- 6.Bake for 25–30 minutes until bubbling and lightly golden, and serve.
