Ingredients

  • Zucchini
  • Extra Lean Beef Mince
  • Crushed tomatoes
  • Red Onion
  • Garlic cloves
  • Ricotta Light
  • LIGHT MOZZARELLA SHREDDED CHEESE
  • Olive Oil
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Heat the olive oil and cook the onion, garlic and beef mince until browned. Add the tomatoes and oregano, then simmer for 10 minutes.
  3. 3.Cut the zucchini into slices, like strips.
  4. 4.Layer zucchini slices, meat sauce and ricotta in a small baking dish.
  5. 5.Finish with mozzarella on top.
  6. 6.Bake for 25–30 minutes until bubbling and lightly golden, and serve.
