Ingredients
- Eggs
- Zucchini
- Raw Carrot - peeled
- Greek Feta Cheese
- Olive Oil
- Sea Salt
- Black Pepper, Ground
- Dried Oregano
Instructions
- 1.Grate the zucchini and carrot using the coarse side of a grater, then gently squeeze the zucchini with paper towel to remove excess moisture.
- 2.Crack the eggs into a bowl and whisk until smooth and well combined.
- 3.Add the grated vegetables, feta, oregano, salt and black pepper, then mix until evenly combined.
- 4.Heat the olive oil in a non-stick frying pan over medium heat.
- 5.Pour the egg mixture into the pan and spread it evenly with a spatula.
- 6.Cover the pan with a lid and cook for about 5 minutes, or until the bottom is set and lightly golden.
- 7.Carefully flip the omelette using a plate or spatula and cook for another 3–4 minutes until fully cooked.
- 8.Transfer to a plate and serve immediately while warm.
