Ingredients

  • Eggs
  • Zucchini
  • Raw Carrot - peeled
  • Greek Feta Cheese
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground
  • Dried Oregano

Instructions

  1. 1.Grate the zucchini and carrot using the coarse side of a grater, then gently squeeze the zucchini with paper towel to remove excess moisture.
  2. 2.Crack the eggs into a bowl and whisk until smooth and well combined.
  3. 3.Add the grated vegetables, feta, oregano, salt and black pepper, then mix until evenly combined.
  4. 4.Heat the olive oil in a non-stick frying pan over medium heat.
  5. 5.Pour the egg mixture into the pan and spread it evenly with a spatula.
  6. 6.Cover the pan with a lid and cook for about 5 minutes, or until the bottom is set and lightly golden.
  7. 7.Carefully flip the omelette using a plate or spatula and cook for another 3–4 minutes until fully cooked.
  8. 8.Transfer to a plate and serve immediately while warm.
