Instructions

  1. 1.Toast the wholemeal bread until golden and firm.
  2. 2.In a small pan, lightly sauté the cannellini beans with olive oil, dried oregano, and a pinch of salt, mashing some of the beans to create a creamy texture.
  3. 3.Whisk egg whites and scramble them in a non-stick pan until fluffy. Add salt and pepper as desired.
  4. 4.Spread the bean mixture onto the toast, layer with the scrambled egg whites, and drape the prosciutto over the top.
  5. 5.Finish with fresh spinach leaves and a crack of black pepper.
