Ingredients

  • Turkey Mince
  • Wholemeal Bread
  • Garlic cloves
  • Parmesan
  • Italian Herb Mix
  • Sea Salt
  • Black Pepper, Ground
  • Potato
  • Olive Oil
  • Curly Parsley

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Toss the potatoes with olive oil, parsley, salt and pepper, then roast for 20–25 minutes, turning halfway through.
  3. 3.In a bowl, combine the turkey mince, breadcrumbs, garlic, Parmesan, Italian herbs, salt and pepper. Mix gently and shape into small meatballs.
  4. 4.Heat a non-stick frying pan over medium heat and cook the meatballs for 10–12 minutes, turning regularly until browned and fully cooked.
  5. 5.Check that the potatoes are golden and tender before removing them from the oven.
  6. 6.Let the meatballs rest for 2 minutes before serving.
  7. 7.Plate the meatballs with the garlic potatoes and sprinkle with a little extra Parmesan if desired.
