Ingredients
- Turkey Mince
- Wholemeal Bread
- Garlic cloves
- Parmesan
- Italian Herb Mix
- Sea Salt
- Black Pepper, Ground
- Potato
- Olive Oil
- Curly Parsley
Instructions
- 1.Preheat the oven to 200°C.
- 2.Toss the potatoes with olive oil, parsley, salt and pepper, then roast for 20–25 minutes, turning halfway through.
- 3.In a bowl, combine the turkey mince, breadcrumbs, garlic, Parmesan, Italian herbs, salt and pepper. Mix gently and shape into small meatballs.
- 4.Heat a non-stick frying pan over medium heat and cook the meatballs for 10–12 minutes, turning regularly until browned and fully cooked.
- 5.Check that the potatoes are golden and tender before removing them from the oven.
- 6.Let the meatballs rest for 2 minutes before serving.
- 7.Plate the meatballs with the garlic potatoes and sprinkle with a little extra Parmesan if desired.
