- Raw Lamb Strips - lean
- Diced Tomatoes
- Eggs
- Spring Onion
- Vegetable Oil
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Crack the eggs into a bowl and beat with a fork until combined.
- 2.Heat half the oil in a non-stick frying pan over medium heat.
- 3.Pour in the eggs and gently scramble until just set (about 1 minute).
- 4.Transfer the eggs to a plate.
- 5.Add the remaining oil to the pan.
- 6.Cook the lamb for 6 minutes until browned and fully cooked.
- 7.Add the tomatoes and cook for 2–3 minutes until they begin to soften and release their juices.
- 8.Return the eggs to the pan.
- 9.Season with salt and pepper.
- 10.Stir everything together for about 30 seconds.
- 11.Sprinkle with spring onion and serve.
