  • Raw Lamb Strips - lean
  • Diced Tomatoes
  • Eggs
  • Spring Onion
  • Vegetable Oil
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Crack the eggs into a bowl and beat with a fork until combined.
  2. 2.Heat half the oil in a non-stick frying pan over medium heat.
  3. 3.Pour in the eggs and gently scramble until just set (about 1 minute).
  4. 4.Transfer the eggs to a plate.
  5. 5.Add the remaining oil to the pan.
  6. 6.Cook the lamb for 6 minutes until browned and fully cooked.
  7. 7.Add the tomatoes and cook for 2–3 minutes until they begin to soften and release their juices.
  8. 8.Return the eggs to the pan.
  9. 9.Season with salt and pepper.
  10. 10.Stir everything together for about 30 seconds.
  11. 11.Sprinkle with spring onion and serve.
