- Weet Bix
- Unsweetened Almond Milk
- Chocolate Protein Powder
- High Protein Plain Yoghurt
- Espresso Coffee
- Cocoa Powder
- Organic Bananas
Instructions
- 1.Place the Weet-Bix into the base of a bowl or a glass meal-prep container. Use your hands or the back of a spoon to crush them into a coarse crumb.
- 2.In a small jug, mix the espresso coffee with half of the milk. Pour the coffee mixture over the Weet-Bix. Use a spoon to press the mixture down firmly into an even, flat layer. This creates the "biscuit" base.
- 3.In a separate mixing bowl, add the Greek yoghurt, protein powder, and the remaining milk. Whisk vigorously until the mixture is smooth, creamy, and free of lumps. If the mixture is too thick, add a tiny splash of extra milk until it reaches a spreadable consistency.
- 4.Pour the yoghurt mixture over the prepared Weet-Bix base. Use the back of a spoon or a spatula to smooth the top into a clean, even layer.
- 5.Use a small sieve to lightly dust the cocoa powder over the top until the yoghurt layer is fully covered. Cover and place in the refrigerator for at least 2 hours (overnight is best). This allows the Weet-Bix to soften and the flavours to meld together. Just before eating, slice a fresh banana and arrange the pieces on top.
