Ingredients
- Silken Tofu
- Black beans
- LOW GI + PROTEIN WRAPS
- Raw Sweet Potato - peeled
- Hass Avocado
- Red Capsicum
- Olive Oil
Instructions
- 1.Dice peeled sweet potato into 1cm cubes.
- 2.Heat olive oil in a non-stick frying pan over medium heat. Fry the sweet potato for 8-10 minutes, until softened and golden brown.
- 3.Add the diced capsicum and rinsed black beans to the frying pan. Cook for a further 3 minutes.
- 4.Crumble the silken tofu into the frying pan using your hands. Season with salt and pepper, and stir for 2-3 minutes until heated through.
- 5.Warm the protein wrap in a separate frying pan or microwave. Spread the mashed avocado across the centre of the wrap.
- 6.Spoon the tofu and veggie mixture onto the wrap, fold in the sides, and roll tightly to serve.
