Ingredients

  • Silken Tofu
  • Black beans
  • LOW GI + PROTEIN WRAPS
  • Raw Sweet Potato - peeled
  • Hass Avocado
  • Red Capsicum
  • Olive Oil

Instructions

  1. 1.Dice peeled sweet potato into 1cm cubes.
  2. 2.Heat olive oil in a non-stick frying pan over medium heat. Fry the sweet potato for 8-10 minutes, until softened and golden brown.
  3. 3.Add the diced capsicum and rinsed black beans to the frying pan. Cook for a further 3 minutes.
  4. 4.Crumble the silken tofu into the frying pan using your hands. Season with salt and pepper, and stir for 2-3 minutes until heated through.
  5. 5.Warm the protein wrap in a separate frying pan or microwave. Spread the mashed avocado across the centre of the wrap.
  6. 6.Spoon the tofu and veggie mixture onto the wrap, fold in the sides, and roll tightly to serve.
