- Raw Chicken Breast
- Jasmine Rice
- Coconut milk
- Red Capsicum
- Australian Snow Peas
- Thai Red Curry Paste
- Garlic, peeled
- Ginger
- Fish Sauce
- Vegetable Oil
- Coriander
Instructions
- 1.Heat oil in a saucepan and sauté garlic and ginger.
- 2.Add the curry paste and cook for 1 minute until fragrant.
- 3.Add chicken and cook until lightly browned.
- 4.Pour in coconut milk and fish sauce.
- 5.Simmer for about 8 minutes.
- 6.Add capsicum and snow peas during the last 3 minutes to keep them crisp.
- 7.Serve with jasmine rice (already cooked before) and garnish with coriander.
