Ingredients

  • Raw Chicken Breast
  • Jasmine Rice
  • Coconut milk
  • Red Capsicum
  • Australian Snow Peas
  • Thai Red Curry Paste
  • Garlic, peeled
  • Ginger
  • Fish Sauce
  • Vegetable Oil
  • Coriander

Instructions

  1. 1.Heat oil in a saucepan and sauté garlic and ginger.
  2. 2.Add the curry paste and cook for 1 minute until fragrant.
  3. 3.Add chicken and cook until lightly browned.
  4. 4.Pour in coconut milk and fish sauce.
  5. 5.Simmer for about 8 minutes.
  6. 6.Add capsicum and snow peas during the last 3 minutes to keep them crisp.
  7. 7.Serve with jasmine rice (already cooked before) and garnish with coriander.
