Ingredients

  • Purple Sweet Potato
  • Chicken breast
  • White Onion
  • Curly Parsley
  • Sea Salt
  • Ground black pepper
  • Raw Chicken Egg
  • Panko Breadcrumbs

Instructions

  1. 1.Cook the chicken breast in water for 20 minutes, until soft. (pressure cook)
  2. 2.Cook the potato in water for 10 minutes, until soft.
  3. 3.Shred the chicken, dice the onion, and chop the parsley.
  4. 4.Mash the potatoes until they form a puree.
  5. 5.Mix the mashed potatoes, chicken, onion, parsley, salt, and pepper.
  6. 6.Shape into 1 ball.
  7. 7.Beat the egg.
  8. 8.Dip the balls in the egg and then in the breadcrumbs.
  9. 9.Bake in a preheated air fryer at 180°C for 15 minutes, turning the balls halfway through and serve. ( serving is 1 unit)
