Ingredients
- Purple Sweet Potato
- Chicken breast
- White Onion
- Curly Parsley
- Sea Salt
- Ground black pepper
- Raw Chicken Egg
- Panko Breadcrumbs
Instructions
- 1.Cook the chicken breast in water for 20 minutes, until soft. (pressure cook)
- 2.Cook the potato in water for 10 minutes, until soft.
- 3.Shred the chicken, dice the onion, and chop the parsley.
- 4.Mash the potatoes until they form a puree.
- 5.Mix the mashed potatoes, chicken, onion, parsley, salt, and pepper.
- 6.Shape into 1 ball.
- 7.Beat the egg.
- 8.Dip the balls in the egg and then in the breadcrumbs.
- 9.Bake in a preheated air fryer at 180°C for 15 minutes, turning the balls halfway through and serve. ( serving is 1 unit)
