Instructions
- 1.Boil sweet potato until soft (approx 5-7 minutes).
- 2.Mash the sweet potato. Add salt to taste.
- 3.Spread mashed sweet potato onto the tortilla.
- 4.Sprinkle grated cheese and baby spinach over the sweet potato.
- 5.Fold tortilla in half and heat in a non-stick pan for 1 min on both sides, or until the cheese has melted.
- 6.Serve hot.
