  • Jasmine Rice
  • Raw Chicken Breast
  • Raw Green Bean - fresh
  • Baby Spinach
  • Soy Sauce
  • Thai Sweet Chilli Sauce Light
  • Perinaise Peri-Peri Mayo Mild

Instructions

  1. 1.Rinse the rice well under cold water in a fine sieve, then cook according to packet instructions.
  2. 2.In a mixing bowl, combine whole chicken breast pieces with the soy sauce and sweet chilli sauce. Toss well until the chicken is completely coated. For the best flavour, let it sit for at least 10–15 minutes if you have the time.
  3. 3.Place the marinated chicken into your air fryer basket in a single layer. Set the air fryer to 190°C and cook for 20 minutes. Crucial Step: Make sure to open the basket and flip the chicken over halfway through the cooking time to ensure an even, sticky caramelization on all sides. Once the chicken is cooked, let rest for 5 minutes, then cut into thin slices.

  5. 5.Once the 20 minutes are up, check that the chicken is fully cooked through (it should have no pink in the centre). This is especially important if you are cooking in bulk and crowding the air fryer basket, as overcrowded chicken can require a few extra minutes to cook safely and thoroughly.
  6. 6.While the chicken is finishing up in the air fryer, steam your trimmed green beans. You can do this in a steamer basket over boiling water for 4–5 minutes until they are tender-crisp and bright green, or in a microwave-safe bowl with a splash of water for about 2–3 minutes.
  7. 7.Build your bowl: lay down a bed of your cooked rice, add a layer of fresh baby spinach directly over the warm rice so it wilts slightly, add the freshly steamed green beans, and top with your air-fried sweet chilli and soy chicken. Finish it all off with a generous drizzle of Nandos Perinaise.
