Ingredients

  • Zucchini
  • Extra Lean Beef Mince
  • Red Onion
  • Garlic cloves
  • Olive Oil
  • Crushed tomatoes
  • LIGHT MOZZARELLA SHREDDED CHEESE
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Cut the zucchini in half lengthwise and scoop out the centre. Chop the removed flesh.
  3. 3.Heat the olive oil and cook the onion until softened. Add the garlic, beef mince and chopped zucchini.
  4. 4.Stir in the crushed tomatoes, oregano, salt and pepper. Simmer for 8 minutes.
  5. 5.Fill the zucchini halves with the mixture, top with mozzarella and bake for 15 minutes.
  6. 6.Serve warm.
