- Zucchini
- Extra Lean Beef Mince
- Red Onion
- Garlic cloves
- Olive Oil
- Crushed tomatoes
- LIGHT MOZZARELLA SHREDDED CHEESE
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 200°C.
- 2.Cut the zucchini in half lengthwise and scoop out the centre. Chop the removed flesh.
- 3.Heat the olive oil and cook the onion until softened. Add the garlic, beef mince and chopped zucchini.
- 4.Stir in the crushed tomatoes, oregano, salt and pepper. Simmer for 8 minutes.
- 5.Fill the zucchini halves with the mixture, top with mozzarella and bake for 15 minutes.
- 6.Serve warm.
