Instructions
- 1.Bake the sweet potato at 200°C for 25–30 minutes until soft.
- 2.Lightly sauté the spinach, while put salt and pepper.
- 3.Slice open the sweet potato, fluff the inside with a fork, and season with olive oil, salt and pepper.
- 4.Fill with cottage cheese and spinach.
- 5.Return to the oven for 5 minutes and serve warm.
