Ingredients
- Chicken breast
- Brown Rice
- Olive Oil
- High protein yoghurt
- Red Capsicum

Instructions
- 1.Cook 75g Basmati Rice according to package instructions (approx 10-12 minutes) and set aside.
- 2.Dice 100g Chicken Breast and season with salt and 3g minced Garlic.
- 3.Heat 15g Olive Oil in a pan over medium-high heat and cook chicken for 6-8 minutes until golden and cooked through.
- 4.Add 50g sliced Capsicum to the pan for the last 3 minutes to soften slightly.
- 5.In a small bowl, mix 50g Greek Yoghurt with a squeeze of Lemon to create a high-protein sauce.
- 6.Assemble the bowl by layering the rice, chicken, and capsicum, then drizzle with the yoghurt sauce.
