- Continental Parsley
- Red Onion
- Garlic cloves
- Lemon lime
- Olive Oil

- Raw Beef Sirloin Steak - lean

Instructions
- 1.Preheat oven to 200°C.
- 2.Halve the squash lengthwise, drizzle with olive oil, and rub it in.
- 3.Roast on a baking tray until fork-tender (usually 40–50 minutes).
- 4.2. Blend the Chimichurri
- 5.While the squash is in the oven:
- 6.Combine parsley, red onion, garlic, and lemon juice in a blender.
- 7.Add a drizzle of olive oil and blend until smooth. Set aside.

- 10.Sear the steak to your liking. Crucial: Let it rest for 5 minutes before slicing into thick strips.
- 11.Cook the broccolini (steam or pan-fry) until tender-crisp and bright green.

- 13.Plate the squash: Top with flaky salt and a pinch of fresh parsley.
- 14.Add the sides: Arrange the broccolini and sliced steak next to the squash.
- 15.Finish: Spoon the chimichurri generously over the steak.
