Ingredients
- Raw Beef Rump Steak - lean
- Purple Sweet Potato
- Raw Broccoli
- Olive Oil
- Dijon Mustard
- lemon juice
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Cut the sweet potato into small cubes so it cooks faster.
- 2.Place the sweet potato in a saucepan of boiling water and cook for approximately 10–12 minutes, or until soft.
- 3.Drain and roughly mash the sweet potato with a fork.
- 4.Season the steak with salt and pepper.
- 5.Heat half of the olive oil in a frying pan.
- 6.Cook the steak for approximately 3–4 minutes on each side, depending on its thickness and your preferred level of doneness.
- 7.Remove the steak from the pan and let it rest for 2 minutes.
- 8.Add the broccoli to the same pan with a small splash of water. Cover and cook for 3–4 minutes.
- 9.Mix the Dijon mustard and lemon juice together to make a simple sauce.
- 10.Serve the sliced steak with the sweet potato smash, broccoli and mustard-lemon sauce.
