Ingredients

  • Eggs
  • Tasty shredded cheese
  • Baby Spinach
  • Milk
  • Butter
  • Sea Salt
  • Black Pepper, Ground
  • Wholemeal Bread

Instructions

  1. 1.Crack the eggs into a small bowl.
  2. 2.Add the milk, a pinch of salt, and black pepper.
  3. 3.Whisk the mixture until the yolks and whites are fully combined.
  4. 4.Heat a non-stick frying pan over medium-low heat and add the butter.
  5. 5.Once the butter has melted, add the baby spinach and cook for about 1 minute until it begins to wilt.
  6. 6.Pour the egg mixture into the pan.
  7. 7.Let the eggs cook undisturbed for about 20 seconds, then gently stir with a spatula, folding the eggs from the edges toward the centre.
  8. 8.When the eggs are almost set but still slightly soft, sprinkle the shredded cheese over the top.
  9. 9.Continue stirring gently until the cheese has melted and the eggs are fully cooked but still creamy.
  10. 10.Transfer to a plate and serve immediately with wholegrain toast if desired.
