Instructions
- 1.Crack the eggs into a small bowl.
- 2.Add the milk, a pinch of salt, and black pepper.
- 3.Whisk the mixture until the yolks and whites are fully combined.
- 4.Heat a non-stick frying pan over medium-low heat and add the butter.
- 5.Once the butter has melted, add the baby spinach and cook for about 1 minute until it begins to wilt.
- 6.Pour the egg mixture into the pan.
- 7.Let the eggs cook undisturbed for about 20 seconds, then gently stir with a spatula, folding the eggs from the edges toward the centre.
- 8.When the eggs are almost set but still slightly soft, sprinkle the shredded cheese over the top.
- 9.Continue stirring gently until the cheese has melted and the eggs are fully cooked but still creamy.
- 10.Transfer to a plate and serve immediately with wholegrain toast if desired.
