Ingredients

  • Diced Tomatoes50 g
  • Aldi lentils canned100 g
  • Red Capsicum50 g
  • Carrot Cake50 g
  • chilli3 g
  • Curry Powder3 g
  • Green Beans40 g
  • Light coconut milk45 ml
  • Minced Garlic15 g
  • Red Onion30 g
  • Rice35 g

Instructions

  1. 1.Add diced onion and garlic to a pan, cook until brown and translucent. Add curry powder and cook, stirring, for 1 minute or until aromatic. Add lentils and stir until coated.
  2. 2.Transfer onions, garlic and lentils to a slow cooker. Add the stock, diced carrot, tomatoes, capsicum and chilli. Cover and cook on high for 3 hours or low for 6 hours.
  3. 3.Add the coconut milk and beans and stir until combined. Cover and cook on High for a further 15 minutes (or Low for 30 minutes) or until beans are tender.
  4. 4.Cook rice as per packet instructions.
  5. 5.Add rice to a bowl and top with lentil curry.
