Ingredients
- Diced Tomatoes50 g
- Aldi lentils canned100 g
- Red Capsicum50 g
- Carrot Cake50 g
- chilli3 g
- Curry Powder3 g
- Green Beans40 g
- Light coconut milk45 ml
- Minced Garlic15 g
- Red Onion30 g
- Rice35 g
Instructions
- 1.Add diced onion and garlic to a pan, cook until brown and translucent. Add curry powder and cook, stirring, for 1 minute or until aromatic. Add lentils and stir until coated.
- 2.Transfer onions, garlic and lentils to a slow cooker. Add the stock, diced carrot, tomatoes, capsicum and chilli. Cover and cook on high for 3 hours or low for 6 hours.
- 3.Add the coconut milk and beans and stir until combined. Cover and cook on High for a further 15 minutes (or Low for 30 minutes) or until beans are tender.
- 4.Cook rice as per packet instructions.
- 5.Add rice to a bowl and top with lentil curry.
