Ingredients
- Bacon60 g
- Butter20 g
- Chicken Stock160 ml
- Light Tasty Cheese Shredded15 g
- Red Onion30 g
- Plain flour5 g
- Potato200 g
- Salt & Pepper Squid1 count
- Light Sour Cream10 g
- Light Thickened Cream60 ml
- Raw Carrot - peeled
Instructions
- 1.Chop the potatoes and carrots into cubes and add to the slow cookers.
- 2.Add in chicken broth, salt and pepper.
- 3.Slow cook for 6 hours (on low) or 4 hours (on high).
- 4.In a pot, add the cream, butter, flour and sour cream. Whisk well until thickened and smooth. Set Aside.
- 5.Once the slow cooker is done, add cream mixture and stir well. Cook on low for an additional 30 minutes.
- 6.Finely dice bacon and cook in a pan or air fryer until crispy.
- 7.Serve potato soup in a bowl and top with shredded cheese and crispy bacon pieces.
