Ingredients

  • Raw Chicken Breast
  • Raw Eggplant - unpeeled
  • Canned Tomatoes
  • Capers
  • Garlic, peeled
  • Extra virgin oil
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground
  • Fresh Basil

Instructions

  1. 1.Season the chicken with salt, pepper and oregano.
  2. 2.Heat the olive oil and cook the chicken for about 6 minutes per side. Remove and set aside.
  3. 3.Sauté the garlic and eggplant for 5 minutes.
  4. 4.Add the tomatoes and capers, then simmer for 5 minutes.
  5. 5.Return the chicken to the pan for 2–3 minutes.
  6. 6.Garnish with fresh basil and serve.
