- Raw Chicken Breast
- Raw Eggplant - unpeeled
- Canned Tomatoes
- Capers
- Garlic, peeled
- Extra virgin oil
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
- Fresh Basil
Instructions
- 1.Season the chicken with salt, pepper and oregano.
- 2.Heat the olive oil and cook the chicken for about 6 minutes per side. Remove and set aside.
- 3.Sauté the garlic and eggplant for 5 minutes.
- 4.Add the tomatoes and capers, then simmer for 5 minutes.
- 5.Return the chicken to the pan for 2–3 minutes.
- 6.Garnish with fresh basil and serve.
