Ingredients
- Chicken breast
- Jasmine Rice
- Cornflour - from maize starch
- Olive Oil
- Red Capsicum
- Spring Onion
- Thai Sweet Chilli Sauce Light
- Soy Sauce
Instructions
- 1.Cook the jasmine rice according to package instructions.
- 2.Dice chicken breast into bite-sized pieces and toss in a bowl with cornflour, salt, and plenty of cracked black pepper.
- 3.Heat olive oil in a large frypan or wok over high heat. Add chicken and cook until golden and crispy on all sides.
- 4.Remove the chicken and add sliced capsicum and spring onion to the pan. Splash with soy sauce and cook for 2-3 minutes.
- 5.Serve the crispy chicken and vegetables over the fluffy rice and drizzle with sweet chilli sauce.
