Ingredients

  • Chicken breast
  • Jasmine Rice
  • Cornflour - from maize starch
  • Olive Oil
  • Red Capsicum
  • Spring Onion
  • Thai Sweet Chilli Sauce Light
  • Soy Sauce

Instructions

  1. 1.Cook the jasmine rice according to package instructions.
  2. 2.Dice chicken breast into bite-sized pieces and toss in a bowl with cornflour, salt, and plenty of cracked black pepper.
  3. 3.Heat olive oil in a large frypan or wok over high heat. Add chicken and cook until golden and crispy on all sides.
  4. 4.Remove the chicken and add sliced capsicum and spring onion to the pan. Splash with soy sauce and cook for 2-3 minutes.
  5. 5.Serve the crispy chicken and vegetables over the fluffy rice and drizzle with sweet chilli sauce.
