  • Salmon Fillets
  • Purple Sweet Potato
  • Green peas
  • Rocket
  • Olive Oil
  • lemon juice
  • Black Pepper, Ground

Instructions

  1. 1.Cut the sweet potato into small cubes.
  2. 2.Microwave for approximately 5 minutes or roast until soft.
  3. 3.Season the salmon with lemon juice and black pepper.
  4. 4.Grill or pan-fry the salmon for 8–10 minutes until cooked.
  5. 5.Cook the peas for a few minutes until tender.
  6. 6.Assemble the plate: Sweet potato, Salmon, Green peas and Rocket leaves.
  7. 7.Finish with olive oil and extra lemon juice.
