  • Salmon Fillets
  • Arborio Risotto Rice
  • Green peas
  • real stock vegetable
  • Red Onion
  • Garlic cloves
  • Olive Oil
  • Parmesan Cheese Block
  • Spreadable Light Cream Cheese
  • Lemon Peel
  • Black Pepper, Ground

Instructions

  1. 1.Heat olive oil in a saucepan over medium heat.
  2. 2.Add onion and garlic and cook for 2 minutes until soft.
  3. 3.Add the arborio rice and stir for 1 minute.
  4. 4.Slowly add the vegetable stock, stirring frequently.
  5. 5.Continue adding liquid until the rice becomes creamy and cooked (about 18–20 minutes).
  6. 6.In another pan, cook the salmon cubes for 5–6 minutes.
  7. 7.Add peas and salmon to the risotto.
  8. 8.Stir in parmesan cheese and cream cheese if using.
  9. 9.Finish with lemon zest and black pepper.
