- Salmon Fillets
- Arborio Risotto Rice
- Green peas

- Garlic cloves

Instructions
- 1.Heat olive oil in a saucepan over medium heat.
- 2.Add onion and garlic and cook for 2 minutes until soft.
- 3.Add the arborio rice and stir for 1 minute.
- 4.Slowly add the vegetable stock, stirring frequently.
- 5.Continue adding liquid until the rice becomes creamy and cooked (about 18–20 minutes).
- 6.In another pan, cook the salmon cubes for 5–6 minutes.
- 7.Add peas and salmon to the risotto.
- 8.Stir in parmesan cheese and cream cheese if using.
- 9.Finish with lemon zest and black pepper.
