Ingredients

  • Kangaroo Steak
  • Purple Sweet Potato
  • Egg
  • Olive Oil
  • Baby Spinach

Instructions

  1. 1.Dice the sweet potato into small 1cm cubes.
  2. 2.Heat half the olive oil in a non-stick pan over medium heat and cook sweet potato for 8-10 minutes until softened and golden.
  3. 3.Slice the kangaroo steak into thin strips and add to the pan with the remaining oil.
  4. 4.Sear the kangaroo for 3-4 minutes; do not overcook as kangaroo is best served medium-rare.
  5. 5.Crack the egg directly into the pan and cook for 2-3 minutes until the white is set but the yolk is still runny.
  6. 6.Toss in the spinach at the last minute, stirring until just wilted, then serve immediately.
