Ingredients

  • Pumpkin
  • Greek Feta Cheese
  • Baby Spinach
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C (fan-forced 180°C).
  2. 2.Peel the pumpkin and cut it into bite-sized cubes.
  3. 3.Place the cubes on a lined baking tray.
  4. 4.Drizzle with olive oil and season with salt and pepper.
  5. 5.Toss well to coat evenly.
  6. 6.Roast for 20–25 minutes, turning halfway through cooking.
  7. 7.Check that the pumpkin is tender by inserting a fork.
  8. 8.Place the spinach in a serving bowl.
  9. 9.Add the hot roasted pumpkin on top so the spinach wilts slightly.
  10. 10.Sprinkle with feta cheese and serve.
