Instructions
- 1.Preheat the oven to 200°C (fan-forced 180°C).
- 2.Peel the pumpkin and cut it into bite-sized cubes.
- 3.Place the cubes on a lined baking tray.
- 4.Drizzle with olive oil and season with salt and pepper.
- 5.Toss well to coat evenly.
- 6.Roast for 20–25 minutes, turning halfway through cooking.
- 7.Check that the pumpkin is tender by inserting a fork.
- 8.Place the spinach in a serving bowl.
- 9.Add the hot roasted pumpkin on top so the spinach wilts slightly.
- 10.Sprinkle with feta cheese and serve.
