Ingredients

  • Red Lentils
  • Brown Onion
  • Garlic cloves
  • Ginger
  • Turmeric ground
  • Ground Cumin
  • Light Coconut Milk
  • Water
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground
  • Coriander

Instructions

  1. 1.Place the lentils in a sieve and rinse under cold water until the water runs mostly clear.
  2. 2.Heat the olive oil in a medium saucepan over medium heat.
  3. 3.Add the onion and cook for 3–4 minutes, stirring occasionally, until softened.
  4. 4.Add the garlic and ginger and cook for 30 seconds until fragrant.
  5. 5.Stir in the turmeric and cumin and cook for another 30 seconds.
  6. 6.Add the lentils and water. Stir well and bring to a gentle boil.
  7. 7.Reduce to a simmer and cook for 15 minutes, stirring occasionally to prevent sticking.
  8. 8.Once the lentils are soft, pour in the coconut milk and season with salt and pepper.
  9. 9.Simmer for another 5 minutes until creamy.
  10. 10.Taste and adjust seasoning before serving.
