Ingredients
- Red Lentils
- Brown Onion
- Garlic cloves
- Ginger
- Turmeric ground
- Ground Cumin
- Light Coconut Milk
- Water
- Olive Oil
- Sea Salt
- Black Pepper, Ground
- Coriander
Instructions
- 1.Place the lentils in a sieve and rinse under cold water until the water runs mostly clear.
- 2.Heat the olive oil in a medium saucepan over medium heat.
- 3.Add the onion and cook for 3–4 minutes, stirring occasionally, until softened.
- 4.Add the garlic and ginger and cook for 30 seconds until fragrant.
- 5.Stir in the turmeric and cumin and cook for another 30 seconds.
- 6.Add the lentils and water. Stir well and bring to a gentle boil.
- 7.Reduce to a simmer and cook for 15 minutes, stirring occasionally to prevent sticking.
- 8.Once the lentils are soft, pour in the coconut milk and season with salt and pepper.
- 9.Simmer for another 5 minutes until creamy.
- 10.Taste and adjust seasoning before serving.
