Ingredients
- Zucchini
- Short cut bacon
- Brown Onion
- Light Tasty Cheese Slices
- Eggs
- Wholemeal Self-Raising Flour
- Extra virgin oil
- Garlic cloves
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 180°C (fan-forced 160°C). Lightly grease a small oven-safe baking dish or ramekin.
- 2.Place the grated zucchini in a clean tea towel or paper towels and squeeze out as much moisture as possible.
- 3.Heat a non-stick frying pan over medium heat. Cook the bacon for 2–3 minutes until lightly golden. Remove from the heat and allow to cool slightly.
- 4.In a medium bowl, combine the zucchini, cooked bacon, grated onion, cheese, garlic and self-raising flour.
- 5.In a separate bowl, lightly whisk the egg with the olive oil, then pour it into the zucchini mixture.
- 6.Season with salt and black pepper, then stir until all the ingredients are evenly combined.
- 7.Spoon the mixture into the prepared baking dish and smooth the top with the back of a spoon.
- 8.Bake for 25–30 minutes, or until the slice is golden, firm in the centre and cooked through.
- 9.Allow to cool for 5 minutes before serving. Enjoy warm.
