Ingredients

  • Zucchini
  • Short cut bacon
  • Brown Onion
  • Light Tasty Cheese Slices
  • Eggs
  • Wholemeal Self-Raising Flour
  • Extra virgin oil
  • Garlic cloves
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 180°C (fan-forced 160°C). Lightly grease a small oven-safe baking dish or ramekin.
  2. 2.Place the grated zucchini in a clean tea towel or paper towels and squeeze out as much moisture as possible.
  3. 3.Heat a non-stick frying pan over medium heat. Cook the bacon for 2–3 minutes until lightly golden. Remove from the heat and allow to cool slightly.
  4. 4.In a medium bowl, combine the zucchini, cooked bacon, grated onion, cheese, garlic and self-raising flour.
  5. 5.In a separate bowl, lightly whisk the egg with the olive oil, then pour it into the zucchini mixture.
  6. 6.Season with salt and black pepper, then stir until all the ingredients are evenly combined.
  7. 7.Spoon the mixture into the prepared baking dish and smooth the top with the back of a spoon.
  8. 8.Bake for 25–30 minutes, or until the slice is golden, firm in the centre and cooked through.
  9. 9.Allow to cool for 5 minutes before serving. Enjoy warm.
