Ingredients

  • Raw Chicken Breast
  • Light soy sauce
  • Ginger
  • Black Pepper, Ground
  • Cornflour - from maize starch
  • Canola Oil
  • Orange juice
  • Navel Orange
  • Light soy sauce
  • White rice vinegar
  • Honey
  • Ginger
  • Garlic cloves
  • Cornflour - from maize starch
  • Water
  • Boiled Brown Rice
  • Spring Onion
  • Sesame Seeds

Instructions

  1. 1.Cut the chicken into small cubes.
  2. 2.Place the chicken in a bowl with the soy sauce, grated ginger and pepper. Mix well until evenly coated.
  3. 3.Add the cornflour and toss until every piece is completely coated.
  4. 4.Heat the oil in a large non-stick frying pan over medium-high heat.
  5. 5.Cook the chicken for 3–4 minutes per side until golden, crispy and fully cooked. Transfer to a paper towel-lined plate.
  6. 6.In a small bowl, whisk together the orange juice, orange zest, soy sauce, rice vinegar, honey, cornflour and water until smooth.
  7. 7.Remove any excess oil from the pan, leaving about 1 teaspoon. Add the garlic and ginger, cooking for about 30 seconds until fragrant.
  8. 8.Pour the orange sauce into the pan and cook for 1–2 minutes, stirring constantly, until it thickens into a glossy sauce.
  9. 9.Return the chicken to the pan and gently toss until every piece is evenly coated.
  10. 10.Serve immediately with cooked rice, then garnish with spring onion and sesame seeds if desired.
