Ingredients

  • Raw Eggplant - unpeeled
  • Zucchini
  • Tomato
  • ITALIAN TOMATO PASSATA
  • Garlic cloves
  • Olive Oil
  • Thyme

Instructions

  1. 1.Preheat the oven to 190°C.
  2. 2.Spread tomato passata in a small baking dish.
  3. 3.Stir garlic into the sauce.
  4. 4.Cut the eggplant, zucchini and tomato in small stips.
  5. 5.Alternate slices of eggplant, zucchini, and tomato.
  6. 6.Arrange them upright in the dish.
  7. 7.Drizzle with olive oil.
  8. 8.Sprinkle with thyme.
  9. 9.Cover loosely with foil.
  10. 10.Bake for 20 minutes.
  11. 11.Remove foil and bake another 5 minutes.
  12. 12.Serve warm.
