- Raw Eggplant - unpeeled
- Zucchini
- Tomato
- ITALIAN TOMATO PASSATA
- Garlic cloves
- Olive Oil
- Thyme
Instructions
- 1.Preheat the oven to 190°C.
- 2.Spread tomato passata in a small baking dish.
- 3.Stir garlic into the sauce.
- 4.Cut the eggplant, zucchini and tomato in small stips.
- 5.Alternate slices of eggplant, zucchini, and tomato.
- 6.Arrange them upright in the dish.
- 7.Drizzle with olive oil.
- 8.Sprinkle with thyme.
- 9.Cover loosely with foil.
- 10.Bake for 20 minutes.
- 11.Remove foil and bake another 5 minutes.
- 12.Serve warm.
