Ingredients

  • Raw Chicken Breast
  • Savoury Rice Cracker Biscuit
  • Tomato Paste - with salt
  • Feta dairy free
  • Red Capsicum
  • Dried Oregano

Instructions

  1. 1.Cut dice the chicken breast and capsicum into small, even pieces.
  2. 2.Heat a non-stick frying pan over medium-high heat. Cook the chicken for 4-5 minutes, until golden brown and cooked through. Ensure the chicken reaches 75°C internal temperature.
  3. 3.Add the diced capsicum to the pan and cook for the final 2 minutes, until slightly softened.
  4. 4.Lay the rice crackers flat and spread an even layer of tomato paste across each one.
  5. 5.Top the rice crackers with the cooked chicken and capsicum, then sprinkle with the dairy-free cheese and dried oregano.
  6. 6.Place the rice cakes under a grill for 45-60 seconds, or until the dairy-free cheese has melted.
