Instructions
- 1.Cut dice the chicken breast and capsicum into small, even pieces.
- 2.Heat a non-stick frying pan over medium-high heat. Cook the chicken for 4-5 minutes, until golden brown and cooked through. Ensure the chicken reaches 75°C internal temperature.
- 3.Add the diced capsicum to the pan and cook for the final 2 minutes, until slightly softened.
- 4.Lay the rice crackers flat and spread an even layer of tomato paste across each one.
- 5.Top the rice crackers with the cooked chicken and capsicum, then sprinkle with the dairy-free cheese and dried oregano.
- 6.Place the rice cakes under a grill for 45-60 seconds, or until the dairy-free cheese has melted.
