Ingredients

  • Basmati Rice
  • Ready to eat prawns
  • Simply Egg Whites
  • Zucchini
  • Red Capsicum
  • Sesame Oil
  • Soy Sauce

Instructions

  1. 1.Cook basmati rice according to package instructions or use pre-chilled cooked rice for better texture. If using pre-cooked rice, use three times the quantity (in grams) of uncooked rice.
  2. 2.Heat sesame oil in a large non-stick wok or pan over high heat.
  3. 3.Add diced zucchini and capsicum, stir-frying for 3-4 minutes until slightly softened.
  4. 4.Add prawns and cook until they just turn pink.
  5. 5.Push ingredients to the side and pour in the egg whites. Scramble until set, then mix everything together.
  6. 6.Toss in the cooked rice and soy sauce. Stir-fry for another 2 minutes until the rice is heated through and slightly crispy.
  7. 7.Serve immediately with a sprinkle of fresh coriander if desired.
