Ingredients
- Basmati Rice
- Ready to eat prawns
- Simply Egg Whites
- Zucchini
- Red Capsicum
- Sesame Oil
- Soy Sauce
Instructions
- 1.Cook basmati rice according to package instructions or use pre-chilled cooked rice for better texture. If using pre-cooked rice, use three times the quantity (in grams) of uncooked rice.
- 2.Heat sesame oil in a large non-stick wok or pan over high heat.
- 3.Add diced zucchini and capsicum, stir-frying for 3-4 minutes until slightly softened.
- 4.Add prawns and cook until they just turn pink.
- 5.Push ingredients to the side and pour in the egg whites. Scramble until set, then mix everything together.
- 6.Toss in the cooked rice and soy sauce. Stir-fry for another 2 minutes until the rice is heated through and slightly crispy.
- 7.Serve immediately with a sprinkle of fresh coriander if desired.
