Ingredients

  • Red Capsicum
  • Pork Mince
  • Brown Rice
  • Baby Spinach
  • Garlic cloves
  • Crushed Tomatoes
  • Extra virgin oil
  • Dried Oregano
  • Parmesan Cheese Block
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Cook the rice according to the instructions.
  2. 2.Preheat the oven to 200°C (180°C fan-forced).
  3. 3.Cut the top off the capsicum and remove the seeds and membranes. Set aside.
  4. 4.Heat the olive oil in a frying pan over medium heat.
  5. 5.Add the garlic and cook for about 30 seconds until fragrant.
  6. 6.Add the pork mince and cook for 6–7 minutes, breaking it up with a spoon until browned and fully cooked.
  7. 7.Stir in the crushed tomatoes, oregano, salt and pepper. Cook for 2 minutes.
  8. 8.Add the baby spinach and stir until just wilted.
  9. 9.Mix in the cooked brown rice and combine well.
  10. 10.Spoon the pork mixture into the hollow capsicum, pressing down gently to fill it completely.
  11. 11.Place the stuffed capsicum in a small baking dish and bake for 20–25 minutes until the capsicum is tender.
  12. 12.Remove from the oven and sprinkle with Parmesan cheese before serving.
