Ingredients
- Red Capsicum
- Pork Mince
- Brown Rice
- Baby Spinach
- Garlic cloves
- Crushed Tomatoes
- Extra virgin oil
- Dried Oregano
- Parmesan Cheese Block
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Cook the rice according to the instructions.
- 2.Preheat the oven to 200°C (180°C fan-forced).
- 3.Cut the top off the capsicum and remove the seeds and membranes. Set aside.
- 4.Heat the olive oil in a frying pan over medium heat.
- 5.Add the garlic and cook for about 30 seconds until fragrant.
- 6.Add the pork mince and cook for 6–7 minutes, breaking it up with a spoon until browned and fully cooked.
- 7.Stir in the crushed tomatoes, oregano, salt and pepper. Cook for 2 minutes.
- 8.Add the baby spinach and stir until just wilted.
- 9.Mix in the cooked brown rice and combine well.
- 10.Spoon the pork mixture into the hollow capsicum, pressing down gently to fill it completely.
- 11.Place the stuffed capsicum in a small baking dish and bake for 20–25 minutes until the capsicum is tender.
- 12.Remove from the oven and sprinkle with Parmesan cheese before serving.
