Instructions

  1. 1.Preheat the oven to 200°C (390°F).
  2. 2.Place the pita bread on a baking tray lined with baking paper.
  3. 3.Spread the basil pesto evenly across the pita.
  4. 4.Arrange the mozzarella slices over the pesto.
  5. 5.Scatter the cherry tomatoes evenly on top.
  6. 6.Sprinkle with grated Parmesan.
  7. 7.Bake for 7–8 minutes, or until the cheese has melted and the edges are lightly golden.
  8. 8.Remove from the oven.
  9. 9.Finish with fresh basil leaves and black pepper.
  10. 10.Slice into wedges and serve immediately.
