Ingredients
- Raw Chicken Breast
- Zucchini
- Fresh whole Mushrooms
- Basil pesto
- Extra virgin oil
- Garlic cloves
- Sea Salt
- Black Pepper, Ground
- Parmesan Cheese Block
Instructions
- 1.Season the chicken with salt and pepper.
- 2.Heat the olive oil in a frying pan and cook the chicken for about 6 minutes on each side, or until cooked through. Remove and set aside.
- 3.In the same pan, sauté the garlic for 30 seconds, then add the mushrooms and cook for 4 minutes.
- 4.Add the zucchini and cook for another 4 minutes until tender.
- 5.Stir the pesto through the vegetables, then return the chicken to the pan and cook for another 2 minutes.
- 6.Sprinkle with Parmesan, if using, and serve immediately.
