Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Fresh whole Mushrooms
  • Basil pesto
  • Extra virgin oil
  • Garlic cloves
  • Sea Salt
  • Black Pepper, Ground
  • Parmesan Cheese Block

Instructions

  1. 1.Season the chicken with salt and pepper.
  2. 2.Heat the olive oil in a frying pan and cook the chicken for about 6 minutes on each side, or until cooked through. Remove and set aside.
  3. 3.In the same pan, sauté the garlic for 30 seconds, then add the mushrooms and cook for 4 minutes.
  4. 4.Add the zucchini and cook for another 4 minutes until tender.
  5. 5.Stir the pesto through the vegetables, then return the chicken to the pan and cook for another 2 minutes.
  6. 6.Sprinkle with Parmesan, if using, and serve immediately.
