Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Olive Oil
  • Garlic cloves
  • Ginger
  • Natural Peanut Butter
  • Light Coconut Milk
  • Reduced Salt Soy Sauce
  • lemon juice
  • Coriander

Instructions

  1. 1.In a small bowl, whisk together the peanut butter, coconut milk, soy sauce and lime juice until smooth.
  2. 2.Heat the olive oil in a frying pan over medium heat and cook the garlic and ginger for about 30 seconds.
  3. 3.Add the chicken and cook for 5–6 minutes until browned and cooked through.
  4. 4.Stir in the carrot and cook for 2 minutes.
  5. 5.Add the zucchini and cook for another 3 minutes until slightly tender.
  6. 6.Pour the peanut sauce over the chicken and vegetables, stirring until everything is evenly coated.
  7. 7.Simmer for 2 minutes until the sauce is warm and slightly thickened.
  8. 8.Garnish with fresh coriander and serve on its own or with steamed jasmine or brown rice.
