Ingredients
- Wholemeal Wheat Pasta - dry
- Zucchini
- Raw Carrot - peeled
- Tomato
- Olive Oil
- Garlic cloves
- Parmesan Cheese Block
- Sea Salt
- Black Pepper, Ground
- Fresh Basil
Instructions
- 1.Bring a saucepan of salted water to the boil and cook the wholemeal pasta according to the package instructions.
- 2.While the pasta cooks, heat the olive oil in a frying pan over medium heat and sauté the garlic for about 30 seconds.
- 3.Add the diced carrot and cook for 3–4 minutes until it begins to soften.
- 4.Stir in the zucchini and cook for another 3 minutes.
- 5.Add the diced tomato and cook for 2–3 minutes until it forms a light sauce.
- 6.Drain the pasta, reserving 2 tablespoons of the cooking water.
- 7.Toss the pasta with the vegetables, adding the reserved pasta water if needed to create a silky sauce.
- 8.Sprinkle with Parmesan cheese, garnish with fresh basil, and serve immediately.
