Ingredients

  • Wholemeal Wheat Pasta - dry
  • Zucchini
  • Raw Carrot - peeled
  • Tomato
  • Olive Oil
  • Garlic cloves
  • Parmesan Cheese Block
  • Sea Salt
  • Black Pepper, Ground
  • Fresh Basil

Instructions

  1. 1.Bring a saucepan of salted water to the boil and cook the wholemeal pasta according to the package instructions.
  2. 2.While the pasta cooks, heat the olive oil in a frying pan over medium heat and sauté the garlic for about 30 seconds.
  3. 3.Add the diced carrot and cook for 3–4 minutes until it begins to soften.
  4. 4.Stir in the zucchini and cook for another 3 minutes.
  5. 5.Add the diced tomato and cook for 2–3 minutes until it forms a light sauce.
  6. 6.Drain the pasta, reserving 2 tablespoons of the cooking water.
  7. 7.Toss the pasta with the vegetables, adding the reserved pasta water if needed to create a silky sauce.
  8. 8.Sprinkle with Parmesan cheese, garnish with fresh basil, and serve immediately.
