- Fusilli
- Raw Carrot - peeled
- Baby Spinach
- Olive Oil
- Garlic cloves
- Parmesan Cheese Block
- Fresh Basil
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 200°C.
- 2.Toss the carrot slices with half the olive oil and roast for about 18 minutes.
- 3.Meanwhile, cook the pasta according to the package instructions.
- 4.Drain the pasta, reserving 2 tablespoons of the cooking water.
- 5.Heat the remaining olive oil in a frying pan.
- 6.Cook the garlic for 30 seconds.
- 7.Add the spinach and cook until wilted.
- 8.Add the roasted carrots and cooked pasta.
- 9.Pour in the reserved pasta water and stir gently.
- 10.Sprinkle with Parmesan cheese and dried basil before serving.
