Ingredients

  • Fusilli
  • Raw Carrot - peeled
  • Baby Spinach
  • Olive Oil
  • Garlic cloves
  • Parmesan Cheese Block
  • Fresh Basil
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Toss the carrot slices with half the olive oil and roast for about 18 minutes.
  3. 3.Meanwhile, cook the pasta according to the package instructions.
  4. 4.Drain the pasta, reserving 2 tablespoons of the cooking water.
  5. 5.Heat the remaining olive oil in a frying pan.
  6. 6.Cook the garlic for 30 seconds.
  7. 7.Add the spinach and cook until wilted.
  8. 8.Add the roasted carrots and cooked pasta.
  9. 9.Pour in the reserved pasta water and stir gently.
  10. 10.Sprinkle with Parmesan cheese and dried basil before serving.
