- Penne
- Raw Pork Loin Chop
- Olive Oil
- Garlic cloves
- Baby Spinach
- Cherry Tomato
- Parmesan Cheese Block
- Sea Salt
- Black Pepper, Ground
- Dried Oregano
Instructions
- 1.Bring a saucepan of salted water to the boil.
- 2.Cook the pasta according to the packet instructions.
- 3.While the pasta cooks, heat the olive oil in a frying pan.
- 4.Cook the garlic for about 30 seconds, stirring constantly.
- 5.Add the pork and cook until lightly browned.
- 6.Stir in the cherry tomatoes and cook for another 2 minutes.
- 7.Add the spinach and stir until just wilted.
- 8.Drain the pasta, reserving a tablespoon of the cooking water if needed.
- 9.Toss the pasta through the pork and vegetables.
- 10.Season with oregano, salt, and black pepper.
- 11.If the pasta seems dry, add a splash of the reserved cooking water.
- 12.Sprinkle with Parmesan before serving.
