- Penne
- Raw Chicken Breast
- Corn Kernels
- Tomato
- Olive Oil
- Garlic cloves
- Parmesan Cheese Block
- Fresh Basil
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Bring a saucepan of water to the boil.
- 2.Add a pinch of salt and cook the pasta according to the package instructions.
- 3.Meanwhile, heat the olive oil in a frying pan over medium heat.
- 4.Cook the garlic for about 30 seconds.
- 5.Add the diced chicken and cook for approximately 6 minutes until lightly browned and cooked through.
- 6.Stir in the tomato and cook for another 2 minutes.
- 7.Add the corn and cook for about 2 minutes until heated through.
- 8.Drain the pasta, reserving 2 tablespoons of the cooking water.
- 9.Add the cooked pasta to the pan and toss everything together.
- 10.If needed, add a little of the reserved pasta water to create a light sauce.
- 11.Finish with grated Parmesan and dried basil before serving.
