Ingredients
- Basa Fillet
- Zucchini
- Raw Carrot - peeled
- Olive Oil
- Mixed Herbs
- lemon juice
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 200°C (180°C fan-forced).
- 2.Toss the zucchini and carrot with half the olive oil, mixed herbs, salt and pepper. Roast for 18–20 minutes.
- 3.Season the basa with salt, pepper and lemon juice.
- 4.Heat the remaining olive oil and cook the fish for about 4 minutes per side.
- 5.Serve with the roasted vegetables.
