Ingredients

  • Basa Fillet
  • Zucchini
  • Raw Carrot - peeled
  • Olive Oil
  • Mixed Herbs
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C (180°C fan-forced).
  2. 2.Toss the zucchini and carrot with half the olive oil, mixed herbs, salt and pepper. Roast for 18–20 minutes.
  3. 3.Season the basa with salt, pepper and lemon juice.
  4. 4.Heat the remaining olive oil and cook the fish for about 4 minutes per side.
  5. 5.Serve with the roasted vegetables.
