Ingredients
- Eggs
- Pickled mushrooms
- Garlic, peeled
- Olive Oil
- Mozzarella Cheese
- Curly Parsley
Instructions
- 1.Cut each mushroom into 3 slices or just in half. Peel and chop the garlic.
- 2.Heat a frying pan over medium heat and drizzle with 1 tablespoon of olive oil, add the mushrooms and sauté until they begin to brown.
- 3.Add the garlic, season with black pepper and a pinch of salt, and mix for a few more minutes. Set aside.
- 4.Crack the eggs into a bowl or plate, season with a pinch of salt and natural seasonings if desired, beat with a fork until the whites and yolks are well mixed.
- 5.Return the frying pan to low heat, heat the remaining olive oil and add the beaten eggs.
- 6.When the omelet is cooked, place half of the sautéed mushrooms on one side and fold the ends of the omelet.
- 7.Transfer to a plate. Return the other half of the mushrooms to the frying pan and heat for a few minutes. Then, place on top of the omelet, sprinkle with parsley. Serve.
