Ingredients

  • Eggs
  • Pickled mushrooms
  • Garlic, peeled
  • Olive Oil
  • Mozzarella Cheese
  • Curly Parsley

Instructions

  1. 1.Cut each mushroom into 3 slices or just in half. Peel and chop the garlic.
  2. 2.Heat a frying pan over medium heat and drizzle with 1 tablespoon of olive oil, add the mushrooms and sauté until they begin to brown.
  3. 3.Add the garlic, season with black pepper and a pinch of salt, and mix for a few more minutes. Set aside.
  4. 4.Crack the eggs into a bowl or plate, season with a pinch of salt and natural seasonings if desired, beat with a fork until the whites and yolks are well mixed.
  5. 5.Return the frying pan to low heat, heat the remaining olive oil and add the beaten eggs.
  6. 6.When the omelet is cooked, place half of the sautéed mushrooms on one side and fold the ends of the omelet.
  7. 7.Transfer to a plate. Return the other half of the mushrooms to the frying pan and heat for a few minutes. Then, place on top of the omelet, sprinkle with parsley. Serve.
