Ingredients
- Garlic potatoes
- EXTRA LEAN BEEF MINCE
- Black Beans
- Creamed Corn
- Processed Light Cheese Slices
- Tomato
- Hass Avocado
- Olive Oil
- Greek Yogurt
Instructions
- 1.Preheat the oven to 200°C.
- 2.Cut the potatoes into chips or wedges.
- 3.Toss the potatoes with the olive oil.
- 4.Spread them on a baking tray and bake for 20–25 minutes, turning halfway through.
- 5.Meanwhile, cook the beef mince in a frying pan.
- 6.Add the salt and pepper, black beans and corn.
- 7.Cook for another 2–3 minutes.
- 8.Remove the potatoes from the oven.
- 9.Top with the beef mixture and grated cheese.
- 10.Return to the oven for 3–5 minutes, until the cheese has melted.
- 11.Top with chopped tomato, avocado and Greek yoghurt.
- 12.Serve immediately.
