Instructions
- 1.Crack the egg into a small bowl and whisk with a fork until the yolk and white are fully combined.
- 2.Heat a non-stick frying pan over medium heat.
- 3.Pour the egg into the pan and cook, stirring gently, until softly scrambled and fully cooked.
- 4.Warm the tortilla in a dry frying pan for about 20–30 seconds on each side.
- 5.Transfer the tortilla to a plate.
- 6.Place the scrambled egg in the centre of the tortilla.
- 7.Top with salsa and season with black pepper.
- 8.Fold the tortilla in half and serve while warm.
