Ingredients

  • Purple Sweet Potato
  • Raw Chicken Breast
  • Black beans
  • Corn Kernels
  • High protein yoghurt
  • lemon juice
  • Paprika
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Season the chicken with salt, pepper and paprika.
  2. 2.Cut the chicken into cubes and grill until cooked.
  3. 3.Pierce the sweet potato several times with a fork.
  4. 4.Microwave for 6–8 minutes or bake at 200°C (400°F) for about 20 minutes until soft.
  5. 5.While it cooks, mix the chicken, black beans, corn, paprika, salt, and pepper.
  6. 6.Slice the sweet potato open lengthwise.
  7. 7.Fluff the inside with a fork.
  8. 8.Fill with the chicken mixture.
  9. 9.Top with Greek yogurt and lime juice before serving.
