- Purple Sweet Potato
- Raw Chicken Breast
- Black beans
- Corn Kernels
- High protein yoghurt
- lemon juice
- Paprika
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Season the chicken with salt, pepper and paprika.
- 2.Cut the chicken into cubes and grill until cooked.
- 3.Pierce the sweet potato several times with a fork.
- 4.Microwave for 6–8 minutes or bake at 200°C (400°F) for about 20 minutes until soft.
- 5.While it cooks, mix the chicken, black beans, corn, paprika, salt, and pepper.
- 6.Slice the sweet potato open lengthwise.
- 7.Fluff the inside with a fork.
- 8.Fill with the chicken mixture.
- 9.Top with Greek yogurt and lime juice before serving.
