Ingredients

  • Tuna In Springwater
  • Potato
  • Cucumber baby
  • Cherry Tomato
  • Baby Spinach
  • Olive Oil
  • lemon juice
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Boil the potatoes for 10–12 minutes until tender, then drain and allow them to cool slightly.
  2. 2.Place the spinach, cucumber and cherry tomatoes into a large bowl.
  3. 3.Add the cooked potatoes and drained tuna.
  4. 4.In a small bowl, mix the olive oil, lemon juice, oregano, salt and pepper.
  5. 5.Pour the dressing over the salad.
  6. 6.Toss everything gently until evenly coated.
  7. 7.Serve immediately or chill for 15 minutes for a refreshing cold lunch.
