Ingredients

  • Spaghetti
  • Ready to eat prawns
  • Baby Spinach
  • Garlic cloves
  • Olive Oil
  • Cherry Tomato
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Cook the spaghetti according to the package instructions until al dente.
  2. 2.Reserve ¼ cup of the pasta cooking water, then drain.
  3. 3.Heat the olive oil in a frying pan over medium heat.
  4. 4.Add the garlic and cook for 30 seconds.
  5. 5.Add the prawns and cook for 2–3 minutes per side, until pink and cooked through.
  6. 6.Stir in the cherry tomatoes and spinach. Cook until the spinach has wilted.
  7. 7.Add the cooked pasta and a splash of the reserved pasta water.
  8. 8.Toss everything together until evenly coated.
  9. 9.Finish with lemon juice and chopped parsley before serving.
