  • Aldi lentils canned
  • Raw Carrot - peeled
  • Zucchini
  • Red Onion
  • Garlic cloves
  • Diced Tomatoes
  • Olive Oil
  • Paprika
  • Dried Ground Thyme
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Heat the olive oil in a medium saucepan over medium heat.
  2. 2.Add the onion and carrot and cook for about 4 minutes until softened.
  3. 3.Stir in the garlic and cook for another 30 seconds.
  4. 4.Add the zucchini and paprika, stirring well.
  5. 5.Pour in the diced tomatoes and simmer for 5 minutes.
  6. 6.Add the lentils and thyme, then cook for another 10 minutes, stirring occasionally.
  7. 7.Season with salt and pepper to taste.
  8. 8.Spoon into a bowl and garnish with fresh parsley.
