Ingredients

  • Lamb eye of loin
  • Zucchini
  • Olive Oil
  • Garlic cloves
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Remove the lamb from the fridge 10–15 minutes before cooking to bring it closer to room temperature.
  2. 2.Pat the lamb dry with paper towe, cut into strips and season both sides with salt, pepper, and half of the oregano.
  3. 3.Toss the zucchini slices with olive oil, garlic, and the remaining oregano.
  4. 4.Heat a non-stick frying pan over medium-high heat until hot.
  5. 5.Cook the zucchini for 3–4 minutes per side until lightly golden and tender. Transfer to a plate.
  6. 6.Using the same pan, cook the lamb for about 4–5 minutes per side for medium doneness.
  7. 7.Remove the lamb and let it rest for 3 minutes before slicing.
  8. 8.Serve alongside the grilled zucchini.
