Ingredients
- Lamb eye of loin
- Zucchini
- Olive Oil
- Garlic cloves
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Remove the lamb from the fridge 10–15 minutes before cooking to bring it closer to room temperature.
- 2.Pat the lamb dry with paper towe, cut into strips and season both sides with salt, pepper, and half of the oregano.
- 3.Toss the zucchini slices with olive oil, garlic, and the remaining oregano.
- 4.Heat a non-stick frying pan over medium-high heat until hot.
- 5.Cook the zucchini for 3–4 minutes per side until lightly golden and tender. Transfer to a plate.
- 6.Using the same pan, cook the lamb for about 4–5 minutes per side for medium doneness.
- 7.Remove the lamb and let it rest for 3 minutes before slicing.
- 8.Serve alongside the grilled zucchini.
