Ingredients

  • Haloumi Cheese
  • Mixed Leaf Garden Salad
  • Hass Avocado
  • Cherry Tomato
  • Raw Lebanese Cucumber - peeled
  • Extra virgin oil
  • lemon juice
  • Sesame Seeds
  • Fresh Mint
  • Black Pepper, Ground

Instructions

  1. 1.Heat a non-stick frying pan over medium heat. No oil is needed, as halloumi releases some of its own fat during cooking.
  2. 2.Cook the halloumi slices for 2–3 minutes on each side, until golden brown and slightly crispy.
  3. 3.While the halloumi is cooking, arrange the salad leaves, avocado, cucumber and cherry tomatoes on a serving plate.
  4. 4.Whisk together the olive oil and lemon juice to make a simple dressing.
  5. 5.Place the warm halloumi on top of the salad.
  6. 6.Drizzle with the dressing.
  7. 7.Sprinkle with sesame seeds, fresh mint and a little black pepper.
  8. 8.Serve immediately while the halloumi is still warm.
